I have used visual scripting in the following projects:

A virtual escape room in Escape Simulator’s editor/workshop
I was using prefabs in the form of logic objects that are positioned directly in the scene, connected to relevant game objects and then modifying their properties. You can find out more about it here:

The majority of assets are provided in the editor, but I made a few myself as well. My main goals were: learn how to make a game in this editor in 3 weeks (duration of the build-a-thon) and not using 3rd party assets.

2D platformer game (following a course on Visual Scripting in Unity)
I was using prefabs in the form of nodes that are connected on different Flow Graphs in Unity and changing the properties directly on the nodes and/or in the Inspector. Learning this new skill is very satisfying and rewarding. I haven’t finished the course yet, but this is what I was able to make so far:
I’m doing a course on Visual Scripting. When I finish it, I plan to replace the course assets with my own, add more levels and other things to make it my own.
